Exotic flavors and healing bone broth

  • 6 quarts Water or bone broth
  • 3 lbs Beef bones, approx 3 large marrow bones
  • 1 stick Cinnamon
  • 1 tbsp Fennel Seeds
  • 3 Cardamon pods
  • 4 Star of Anise
  • 1 tbsp Coriander Seeds
  • 1 tbsp Allspice Whole
  • 2 inch Fresh Ginger
  • 1/4 cup Fish Sauce
  • 1 Large Onion, Quartered
  • 1 lbs Beef, thinly sliced
  • Optional Garnish Sliced bell pepper, fresh cilantro, fresh basil, lime wedge, bean sprouts, soy sauce or Braggs Aminos
  1. Bake bones for about 20mins @ 350F. It's not necessary to use bone marrow, but they do add more flavor. Baking the bones first creates a terrific roasted flavor and loosens the marrow. Then remove and let cool. Once cool push marrow out of bones with a knife and add to your broth.

  2. Bring approx. 6 quarts of water or premade bone broth to a low simmer. Bone broth is magically healing and nourishing. I prefer bone broth, but it will taste amazing with just water too! Transfer bones and marrow to broth. Add fish sauce.

  3. Add all the spices. The spices are removed before serving. In a pinch, I have just thrown them in, but you will run across the occasional strong-tasting seed. It’s best to contain the spices in a pouch of some kind. Cheese cloth works well or a large tea infuser.

  4. Add fresh ginger and onion. The onion can be chopped into quarter pieces, skinning is not necessary. Simmer on low for 2 hours

  5. Then remove onions, ginger, bones, and herb pouch.

  6. Add thinly sliced beef. Better quality cuts will be more tender, but I generally use whatever I have on hand. Add bean thread noodles too, these are optional and can be omitted if you are on an AIP style diet. Cook for about 3-5mins and remove from heat

  7. This soup is very fresh. Pick and choose your garnish: Sliced bell pepper, fresh cilantro, fresh basil, lime wedge, bean sprouts, gluten free soy sauce or Braggs Aminos.
